Pierre Hermé

Pierre Hermé (French, born November 20, 1961) is a well known pâtissier recently named World’s Best Pastry Chef by the World's 50 Best Restaurants for 2016. He is the fourth generation descendant of a family with Alsatian bakery and pastry-making know-how. At fourteen years old, he worked as an apprentice to Gaston Lenôtre who became his mentor. Then in the mid eighties and for ten years, he practissed as chef pâtissier at Fauchon. In 1997, he started his own business, Maison Pierre Hermé Paris, with his friend and associate Charles Znaty. The concept was to introduce 'high fashion' pastry that follows the seasons. The concept was successfully exported outside France, with the first shop opening in Tokyo in 1999.

Pierre Hermé is a creator of pastry, he is best known for his macarons. His latest creation is the JARDIN ENCHANTÉ made of Lime, Raspberry & Espelette Pepper. His inspiration might be his friends, chefs, or just a reading in a book. About creation and good tasting, Pierre Hermé says "Creation is not a democratic process, somebody has to decide whether it is good or not. It happens that this person is me".
